Care and precautions
- Rust-sensitive carbon steel: wipe the blade regularly during use and dry it immediately after washing.
- Hand wash only: do not use in the dishwasher or dryer.
- Initial protective coating: a rust-resistant varnish is applied to the blade. The cutting edge may therefore seem less effective at first use. Sharpening will fully restore its cutting qualities.
- Sharpening: Aogami Super steel, which is particularly hard, may require more time and technique to sharpen than standard steel.
- Avoid bones, frozen foods, and twisting motions.
- Do not leave the wooden handle soaking.
- Handcrafted: slight variations in dimensions, forge marks, irregularities, or areas where the black layer is less prominent may appear from one piece to another.
- Aogami Super steel: premium Japanese carbon steel, renowned for its excellent edge retention.
