The Motokane Funayuki Japanese knife comes from the knife-making tradition of Tosa, in Japan's Kochi Prefecture. Historically used for preparing fish, the Funayuki is also appreciated as a versatile knife for everyday tasks. Its hand-forged blade combines a cutting edge made of Aogami No. 1 carbon steel with mild steel, featuring a black Kurouchi finish characteristic of traditional Japanese knives.
Narrower than a Santoku and featuring a fine tip, this Funayuki makes precise cuts of fish, vegetables, and fruit easier. Motokane gives it a straighter cutting edge profile near the heel, allowing for fine cutting techniques such as katsuramuki (shaving into thin sheets). Available in 150 and 165 mm, it is suitable for both home cooking and outdoor preparation, with care appropriate for its carbon steel.
